Particularly easy way to use up food that’s near (not past!) the end of its shelf life

2 cups of rice (I like brown long-grain)
2 eggs
1 can mushroom pieces + stems
1/2 green or red pepper
Any other veggies you might want to use up
Any meat you might want to use up. Beef is particularly good; chopped sirloin meatballs from M&M Meat Shops are, I learned today, absolutely delicious
Half to full cup salsa (I like medium)
Half cup of green relish

Put the rice in an appropriate amount of water on high until it boils, then reduce to low to simmer.

Grease a large frying pan or skillet and fry the eggs until they are hard throughout.  Add salt and/or pepper if desired.

Chop the fried eggs into small pieces

Mince mushrooms, pepper, other veggies, and meat.  Add to the pan.  Fry until meat has reached your preferred temperature/colour

Pour in salsa and relish.  Stir mixture, set pan on very low heat and leave until rice is ready, turning occasionally to avoid burning

Pour in prepared rice.  Stir entire mess until ingredients are thoroughly mixed. Fry until most or all of the water has evaporated or been absorbed.

Serve hot, also good for leftovers!
